Walnut and Banana Bread

Hello everybody! Happy summer! I hope you are all having a fabulous time. I have recently made  banana bread and I wanted to share the recipe with you as it is so delicious! I hope you like it!

You will need:

75ml cold pressed oil

125g plain yoghurt

10g granola

1 tsp vanilla extract

2 ripe bananas

1/2 tsp yeast

150g whole meal bread flour

200g walnuts (optional)

120g dates

1 eating apple

1 tsp baking powder

2 eggs

1. Preheat the oven to 180 C/350 F/ Gas 4. Line a cake tin with greaseproof paper.

2. Place the oil, yoghurt, vanilla extract, peeled bananas and eggs into a food processor until smooth.

3. Add the flour, baking powder, yeast, walnuts, granola and dates and pulse until combined.

4. Grate the apple and then gently stir it in.

5. Pour the mixture into the prepared baking tin and bake for 35-40 minutes or until an inserted skewer comes out clean. Cool on a wire rack before eating.P1040863
